Neighbourly Foraging

First of all, Happy Father's Day to all the great dads out there.

Lucie had some elderflowers that she needed trimmed.  She said cut as many as you want.  So I did!


Some information about the health benefits of Elderflower:




To make Elderflower Cordial:

 Prepare 10 to 15 good, well bloomed flower heads. Pick through them getting rid of bugs and such.  Don't rinse them too heavily, as that will wash away too much of the fragrance.  Get rid of as much stem as possible.



 Slice 2 lemons and measure out 2.5 c of sugar and 3 tsp. citric acid.  Have it all waiting in a big bowl, while you put the kettle on for the boil.


Boil 2.5 liters of water (4.5 c.).

 

Pour the hot water over the lot.


Stir around to dissolve the sugar and citric acid.  Leave for 24 hours, or until you taste it and think it is done.  Stir once in awhile.


Filter into  bottles and keep in the refrigerator.  


Add to sparkling water, or sparkling wine, etc.  I will come back with more ideas soon.
