English Walnut Fairy Cakes

Here are some walnut recipe ideas, as promised.

English Walnut and English Walnut Coffee Fairy Cakes.

75 g. shelled walnuts, chopped
175 g. caster sugar
175 g. butter, softened at room temp.
175 g. cake flour
3 eggs
2 tsp. baking powder

Cream the butter and sugar. Add the eggs, one at a time until all are completely incorporated. Add the flour and baking powder after sifting them together. Fold in the walnuts. Divide between 6 baking cups. Reserve the remaining batter for the other cakes......

Add 2 tsp. of instant coffee to the batter for another variety of cake. Let the coffee dissolve and fold it in. Fill another 6 baking cups, lined with paper cups.

Bake all for 25 minutes, or until golden on top. at 170 c. gas mark 3.

Ice the completely cooled cakes with vanilla icing. If you desire, add a bit of instant coffee to the icing for the coffee fairy cakes. Decorate with whole, or chopped walnuts.
